A 500g, naturally leavened Italian holiday classic with a Herefordshire twist, crafted with a slow-fermented sourdough mother for exceptional depth of flavour and feather-light texture.
This Panettone features a delicate, silky crumb enriched with butter, honey, and egg yolks, then generously studded with fragrant candied orange peel, plump raisins soaked in Tom Oliver’s new Royal Cider, an Apple Cider Brandy aperitif, and subtle notes of vanilla.
Long fermentation gives it a gentle tang, exceptional digestibility, and an aromatic complexity that sets it apart from commercially yeasted versions. Baked to a golden dome and cooled upside-down to preserve its airy structure, this handmade panettone celebrates tradition, craftsmanship, and the true elegance of natural fermentation.
